when it comes to cooking i like the easiest recipes.  here is a family favorite:

bacon-wrapped chicken
from: taste of home 5-ingredient cookbook

makes 6 servings

6 boneless skinless chicken breast halves
1 carton (8oz) whipped cream cheese with onion and chives
1 tablespoon butter, cubed
salt to taste
6 bacon strips

 flatten chicken to 1/2-in thickness.  spread 3 tablespoons cream cheese over each.  dot with butter and sprinkle with salt; roll up.  wrap each with a bacon strip.  place, seam side down, in a greased 13-in x 9-in x 2-in baking pan. 
  bake, uncovered, at 400 degrees for 35-40 minutes or until juices run clear.  broil 6 in from the heat for 5 minutes or until bacon is crisp. 

[flatten chicken] place one chicken breast between two pieces of waxed paper.  starting in the center and working out to the edges, pound lightly with the flat side of a meat mallet until the chicken is even in thickness.
