Chicken and Spinach Lasagna 

  ingredients: 
1/2 box of no-boil lasagna noodles
2 eggs
1 container (15 oz) ricotta cheese
2 cups of shredded mozzarella cheese
1/2 cup of parmesan cheese
1 lb of cooked, shredded chicken
10oz of frozen chopped spinach (thawed and drained)
1 jar of marinara sauce


preheat oven to 375F .  spray pan non-sticking cooking spray.  in a medium bowl  combine cheeses and eggs.  in a separate bowl combine chicken and spinach.  spread a layer of sauce on the bottom of dish followed by a layer of noodles.  on top of noodles spread cheese mixture, then chicken and spinach mixture, then sauce, followed by another layer of noodles.  repeat layers and top with remaining sauce and sprinkle with cheese.  


bake, covered with foil until bubbly, 50-60 minutes.  uncover and continue cooking until cheese is melted, about 5 minutes.  let stand for 15min before cutting.
